I'm coming up on my three year anniversary and all the paid subscriptions are going to be due: Connected Care, Remote, and Guidance. How many people actually pay the $300/yr to maintain these "benefits" and how much do I lose if I do not renew. For example, do I actually lose the GPS navigation functionality that I paid for up front in the price of the Calligraphy?

No, you don't lose that and you can continue to update it via USB like in the past, so that the database of roads POIs stays up to date. You lose the server-side part of it, which is voice search using the internet instead of the built-in database. You may also lose the ability to be re-routed in case of traffic jam (unclear since it also gets traffic data from HD radio, not just the internet).
