Main screen upon start up

When starting the car, my main screen always displays the most basic info. Is there a way for the screen to display/resume the last thing when the car was shut off.

I do not believe so which is just part of the many silly decisions and poor designs when it comes to the infotainment system.

silly is an understatement. You get a blue/black background which is actually the nav map - but is totally useless/unreadable.
